History
Ajinomoto’s story began with Japanese chemist Kikunae Ikeda, who in 1908 discovered that the savory taste of kombu (kelp) broth came from the amino acid glutamate. He identified this distinct flavor as a new basic taste, which he named umami, now recognized alongside sweet, sour, salty, and bitter.
To make this taste widely available, Ikeda developed a method to produce monosodium glutamate (MSG) and patented the process. Working with entrepreneur Saburosuke Suzuki II, the seasoning AJI-NO-MOTO® was launched in 1909, marking the birth of the Ajinomoto Company. [3]
