History
1933 — Foundation
iLLY was founded in 1933 by Francesco Illy, a Hungarian-born entrepreneur who had settled in Trieste. His ambition was to produce excellent coffee consistently and bring high-quality espresso beyond traditional Italian cafés.[1] Trieste was central to this vision, having long served as a major European coffee-trading hub.
1934 — Pressurization
One of Francesco Illy’s most significant innovations was a pressurization system for coffee. This technology allowed coffee to be packaged in a manner that protected its aromas and freshness during transportation and storage. The company obtained a patent for the system in the 1930s, and pressurized packaging remains integral to iLLY’s coffee technology today.[1] This innovation addressed a fundamental challenge in coffee commercialisation: preserving the sensory qualities of roasted coffee over long distances.
1935 — Illetta
Francesco Illy also developed the Illetta, an early high-pressure espresso machine. It utilised a system that separated heating from water pressure and is regarded by iLLY as a precursor to modern espresso machines. This established a defining characteristic of the company: iLLY was not merely a coffee roaster but also an innovator in the technology behind espresso preparation.
1947 — Ernesto Illy
Francesco’s son, Ernesto Illy, joined the company in 1947. Trained as a chemist, Ernesto significantly expanded iLLY’s scientific and technological research. 1965 — Trieste headquarters

1974 — Coffee pods
iLLY was an early pioneer in single-serving coffee. In 1974, it became the first company to industrialise and market coffee pods designed to make café-quality espresso more accessible outside traditional cafés. This marked an important step towards the modern single-serve coffee market.
1980s — International expansion
iLLY entered the United States in 1980, helping introduce Italian espresso culture to a wider American audience. The company also developed technologies for electronically sorting coffee beans based on characteristics such as colour and shape. In 1988, iLLY began working directly with coffee growers as part of its approach to improving quality and rewarding superior production.
1990s — Art, design and global identity
The 1990s were crucial for iLLY’s transformation from a coffee producer into a lifestyle and design brand. In 1992, iLLY launched the illy Art Collection, turning its iconic espresso cups into canvases for contemporary artists. More than 120 internationally recognised artists have participated in the collection over its history.[1]
In 1994, Andrea Illy became CEO, accelerating international expansion, technological innovation, and corporate culture development. In 1996, American pop artist James Rosenquist created a new iLLY logo, reinforcing the company’s association with contemporary art and design.[1]
1999 — Università del Caffè
iLLY established the Università del Caffè in 1999 as an educational centre dedicated to spreading knowledge about quality coffee, from cultivation and processing through to preparation and consumption. Despite its name, it functions as a specialised coffee-education institution associated with iLLY rather than a conventional university.
2000s — Capsule technology and café experience
In 2003, iLLY introduced Espressamente illy, a café concept designed to reproduce the Italian espresso-bar experience internationally. In 2006, the company introduced iperEspresso, its proprietary capsule system designed to produce espresso via a two-stage extraction process.[1] This gave iLLY greater control over the entire espresso experience, from coffee selection to capsule design and machine technology.
2021–present
In 2021, private-equity firm Rhône Capital acquired a minority stake in illycaffè to support international growth, while the Illy family retained control. Cristina Scocchia became CEO in January 2022.
The iLLY Coffee
A defining characteristic of the brand is that iLLY does not build its identity around numerous unrelated blends. Instead, its signature product is a carefully controlled 100% Arabica blend. iLLY states that its classic blend combines Arabica coffees from multiple growing regions and typically contains nine different Arabica varieties. The company selects approximately the top 1% of Arabica beans, requiring them to meet extremely strict quality standards.[1]
Combining different origins aims to produce a consistent flavour profile rather than allowing the coffee’s character to vary dramatically between harvests. It uses a patented extraction process designed to produce espresso with thick crema and strong aroma while simplifying preparation.[1] The system involves inserting an iLLY iperEspresso capsule, after which the machine controls a two-stage extraction process to produce espresso with characteristic crema. By controlling both the coffee capsule and the machine, iLLY maintains significant influence over the final cup.
The illy Art Collection
The illy Art Collection is perhaps the most distinctive example of iLLY connecting coffee with culture.
